Pasta with Peppers

2 tbsp extra-virgin olive oil
2 cloves garlic, sliced thinly
1/2-inch piece of ginger root, grated
1 small shallot, minced
Red and yellow peppers, sliced
1/4 tsp fresh rosemary, chopped
1/4 tsp fresh thyme, chopped
Whole wheat pasta (enough for 2 servings, cooked as per pkg directions)
1-2 tomatoes, chopped
1 tsp fresh basil, chopped
1/2 tsp fresh oregano, chopped
Salt & pepper

Heat oil in a pan and lightly sautée garlic, ginger root and shallot. Add peppers with the rosemary and thyme, and cook on high heat for about 1 minute. Reduce heat to medium. Add cooked pasta, tomatoes and remaining herbs, and toss to coat. Cook until tomatoes and pasta are heated through, and season to taste with salt and pepper.
