Pasta With Marinara Sauce

1 cup dry pasta (your choice)
Extra virgin olive oil
1/2 cup grated onion
1/4 cup grated carrot
1/4 cup grated celery
2 cloves garlic, crushed
3/4 tsp dried basil
1/2 tsp dried oregano
1/4 tsp fennel seed, crushed
1/2 tsp salt
1/4 tsp ground black pepper
1 tbsp brown sugar
1 small can crushed tomatoes
1/2 small can tomato paste

Heat oil in a large pot over medium heat. Add onion, carrot and celery; sauté for 3-5 minutes, or until vegetables are quite soft. Add garlic and dry spices; cook another 2 minutes. Stir in sugar and tomato products; simmer for about 10 minutes. Purée with immersion blender (or pour into blender, purée and return to pot); adjust seasonings if necessary. Cook pasta according to directions. Plate the pasta and top with sauce. Yields 2 servings.
