Partridgeberry Muffins
• 1/2 cup of white sugar
• 1 tbsp of baking powder
• 1/2 tsp of salt
• 1 cup of milk
• 1/2 cup of melted butter
• 1 egg
• 1 tsp of vanilla extract
• Partridgeberry jam
Preheat your oven to 400°F.
Combine your flour, sugar, baking powder and salt in a large bowl.
Beat the milk, melted butter, egg and vanilla extract together in a separate, medium sized, bowl.
Combine the milk and flour mixture together. The batter may be lumpy, but that’s okay!
Fill your muffin-pan cups 1/4 - 1/3 full. Place about a teaspoon of jam on top of the batter and, using a toothpick, slightly mix in to the batter.
Fill up the cups the rest of the way with remaining batter. Place another teaspoon of jam on the top of the batter and use a toothpick again to slightly mix in to the batter.
Bake muffins for 20-25 minutes.
