Partridgeberry Loaf

Difficulty: easy Prep Time: Ten Minutes Total Time: Under an hour
¼ cup shortening
1 cup + 3 tbsp sugar
¾ cup orange juice
1 tbsp grated orange peel
1 beaten egg
1 cup partridgeberries
1 ¾ cup flour
½ tsp baking powder
1 tsp salt
½ cup nuts (eg. walnuts)

Grease a loaf pan and preheat oven to 350°F. Cut in shortening and 1 cup sugar. Stir in orange juice and peel, egg and partridgeberries. Add flour, baking powder, salt and nuts. Mix well until moistened and pour into pan. Sprinkle 3 tbsp sugar over top of loaf and bake for 30 minutes.
