Panini

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
4 (12”) flour tortilla wraps

Spread:
1 cup mayonnaise/salad dressing
3 tbsp smoky chipotle hot sauce
2 gherkins, minced
Filling:
1 red pepper, thinly sliced
1/2 red onion, thinly sliced
1 beefsteak tomato, thinly sliced
1 cup part-skim mozzarella
2 grilled/baked chicken breasts, sliced

Preheat the panini press. Mix together all spread ingredients and spread it evenly on all the wraps. Arrange filling ingredients on each wrap, keeping the pile as flat as possible. Fold two opposite edges of each wrap over the middle so they overlap a bit; do the same with the other two edges, so you have a rectangular package. Spray the press lightly with non-stick cooking spray and lay the sandwich, folds down, on the grill. Close the press and apply a little pressure to ensure good surface contact. Grill until you’re sure the sandwich is heated all the way through and the sandwich surface has attractive grill marks on it. Serve immediately. Yield: 4 servings.
