Oven Barbecued Chicken

2 broiler-fryer chickens, halved or quartered
salt and pepper to taste
3 med. onions, sliced

Sauce:
1 1⁄2 cups tomato juice
1 tsp salt
3⁄4 cup cider vinegar
1⁄4 tsp pepper
1 tbsp Worcestershire sauce
1⁄4 tsp ground red pepper
3 cloves garlic, minced
1⁄4 tsp dry mustard
3 tbsp vegetable oil
1 bay leaf
1 tsp sugar

You can prepare sauce ahead of time and refrigerate until ready to use. Combine all sauce ingredients in a saucepan and bring to a boil; lower heat and let simmer for 15 min. Transfer to fridge until ready to use. Preheat oven to 350°F. Arrange chicken skin side up in shallow roaster. Sprinkle lightly with salt and pepper. Pour in enough hot water to cover the bottom of the pan. Add onion. Bake uncovered for 30 min. Turn chicken over and arrange onion on top. Bake 30 min. more. Remove from oven. Pour off all but 1⁄4 cup drippings. Turn chicken skin side up. Pour barbecue sauce over top. Continue baking, basting in between, for 1 hour.
