Open-Faced Turkey Sandwich

2 cups diced, cooked turkey breast
1 can (8 oz) unsweetened pineapple chunks, drained
3/4 cup diced celery
3/4 cup chopped apple
1/3 cup mayonnaise
1/4 tsp white pepper
1/4 tsp curry powder
6 slices bread
2 tbsp mayonnaise
6 crisp lettuce leaves

Combine first 7 ingredients; stir until well mixed. Cover and refrigerate at least 2 hours. Toast bread if desired; spread with remaining mayonnaise and top with lettuce. Spoon turkey mixture evenly onto each slice. Makes 6 open-faced sandwiches.
