Onion Pudding
1 tbsp vegetable oil
2 cups flour
2 tsp baking powder
1 tbsp sugar
1/2 cup butter, cold and cubed
1 tbsp savoury
1 egg, beaten
3/4 cup milk
Preheat oven to 350F. Caramelize onion in the oil and then cool. In a large bowl, sift together flour, baking powder and sugar. Cut in the butter until mixture is the size of peas, then add savoury and caramelized onions. Whisk together egg and milk and add to dry mixture, mixing until just combined. Drop ice cream scoop-sized portions onto a parchment-lined pan. Flatten slightly and just touch them up against each other. Bake for about 20 minutes. Serve hot with gravy. Yield: 18 puddings
