One Pot Chicken Pasta
1 (16 oz) pkg linguini
4 medium carrots, peeled and cut in thin strips
1 medium red bell pepper, cut in thin strips
1 bunch green onions, white part sliced and green part cut in strips
1/4 cup soya sauce
1 tsp garlic powder
1 tsp cornstarch
1 tbsp sugar
1/2 tsp black pepper
1 (900 ml) box vegetable broth
2 tsp extra virgin olive oil
In a large pot (at least 3 L), add chicken chunks. Break pasta in half and add to the pot. Top with all the rest of the ingredients. Turn the burner to high and heat mixture to a rolling boil. Stir contents and reduce heat to medium-low and cover. Cook for about 15 minutes, stirring to break up the pasta. Cook until most of the liquid has been absorbed and the chicken is completely cooked. Remove from heat, uncover and let sit for 5 minutes before serving.
