Olivers Favourite Dark Fruit Cake
1 cup dark fancy molasses
1 cup dark brown sugar
1 tsp each salt, cinnamon, nutmeg, mace, all-spice and cloves
1 lb chopped dates
1 lb dark raisins
1 lb cut mixed fruit
1 tsp baking soda
4 eggs, beaten
1 large bottle grape jelly
1/4 cup (or more) dark Rum
4 cups all purpose flour gradually and 1 cup chopped walnuts
In large boiler, add margarine, molasses, sugar, salt, spices and fruit. Bring to a boil then reduce heat and simmer over medium heat 15 minutes, stirring frequently. Remove from heat and cool completely. Blend in the baking soda, eggs, grape jelly, vanilla, rum, flour and walnuts. Spoon into large greased and parchment lined iron cakepot. (10" wide and 3" deep), cover. Bake 5-6 hours at 250F for 3 1/2 hours. Leave cake in cakepot overnight to cool completely. Wrap in brandy soaked cheesecloth. Cover with plastic wrap and foil. Leave in a cool place so for 4 to 6 weeks.
