Old-Fashioned Blueberry Cake
1 cup butter
1 egg
1 cup molasses
4 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1/2 tsp cinnamon
1 1/4 cups milk
2-3 cups fresh blueberries
Preheat oven to 325°F.
Cream together the sugar, butter and egg. Add molasses and mix well. Add flour, baking soda, baking powder, vanilla, cinnamon and milk. Combine well. Fold in 2-3 cups of blueberries. Pour batter into a greased bundt pan. Bake at 325°F for 1 1/2 to 2 hours, until toothpick poked near the centre comes out clean. Remove from oven and let cake cool for about 20 minutes. Delicious on its own, or served with custard or hard sauce.
