Multi-Grain Bread

Difficulty: easy Prep Time: More than 15 Minutes Total Time: More than 1 hour
3 1/2 cups warm water
3 tsp quick rising yeast
1/4 cup butter
1/4 cup sugar
3 cups whole wheat flour
3 cups Best for Bread flour (Robin Hood)
1/4 cup wheatgerm
1/3 cup All Bran
3/4 cup flaxmeal

Sprinkle yeast over warm water in bowl and cover for 5 minutes. Melt butter in warm water/yeast mixture. Then add sugar and stir gently with whisk. Add 2 cups of whole wheat flour. Then add 2 cups of Bread Flour (Robin Hood), followed by wheatgerm, All Bran and flax meal. Mix all together with flour by folding with hands. Add 1 cup of whole wheat flour and 1 cup of Robin Hood flour. Mix by hand. Continue to add Robin Hood flour as needed so that dough comes away easily from the mixing bowl. Turn onto a floured surface. Knead for 10 mins. Add flour as needed.

Shape into a round and place in large greased bowl to rise. Leave in warm room for approx. 1 1/2 hours. Place dough on floured surface and cut into desired shapes - usually 3 loaves. Place in greased loaf pans and then place in warm room and let rise again for about 1/2 hour.

Put in 350F degree preheated oven for approx 3/4 to 1 hour (depending on oven) until golden brown. Remove from pans and place on cooling rack. Brush top of loaves with butter.
