Mom’s Raisin Pudding

3/4 cup butter, softened
3/4 cup sugar
1 egg
1 tsp vanilla
1/4 cup water
1 cup raisins
2 cups flour
1/2 tsp salt
1 1/2 tsp baking powder

1 1/2 tsp baking powder
Cream together butter and sugar. Beat in the egg until fluffy. Add vanilla, water and raisins. Mix well. Sift together flour, salt and baking powder. Add to wet ingredients. Mix just until it's all evenly combined, being careful not to over mix. (Mixture should be a little drier than cookie dough.) Place in a pudding bag and steam for about one hour. It should feel firm when done. Serve hot with Jiggs' dinner. Yield: 5-8 servings
