Molasses Duff
3/4 cup brown sugar
1/3 cup butter
2 eggs
1/2 cup molasses, fancy
1 cup raisins
2 3/4 cups flour
1/4 tsp allspice
1/2 tsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
For the hard sauce
3/4 cup butter, softened
1 cup icing sugar, sifted
1 tsp vanilla
3 tbsp dark rum
To make the hard sauce In a bowl, whip the butter and sugar together until it is fluffy. Beat in the vanilla and rum. To make the duff In a large bowl, cream together butter and sugar. Beat in the eggs until fluffy. Add molasses and raisins. Mix well. Sift together flour, spices, baking powder, baking soda and salt. Add to wet ingredients. Mix just until it's all evenly combined, being careful not to over mix. (Mixture should be a little drier than cookie dough.) Place in a pudding bag and steam for about one hour. It should feel firm when done. Serve hot with a dollop of hard sauce (or your favourite sauce). Yield: 6-10 servings
