Marinated Mushroom Salad

1/4 cup extra virgin olive oil
3 tbsp balsamic vinegar
2 tbsp fresh basil, chopped
1 tsp fresh garlic, minced
1/4 tsp salt
1/2 tsp black pepper
8 white/button mushrooms, sliced thinly
1/2 red onion, sliced thinly
1 tomato, cut in half and sliced thinly
4 cups spinach (or mesclun, mixed greens)
3 tbsp balsamic vinegar
2 tbsp fresh basil, chopped
1 tsp fresh garlic, minced
1/4 tsp salt
1/2 tsp black pepper
8 white/button mushrooms, sliced thinly
1/2 red onion, sliced thinly
1 tomato, cut in half and sliced thinly
4 cups spinach (or mesclun, mixed greens)
Whisk together the oil, vinegar, basil, garlic, salt and pepper. Add the mushroom, onion and tomato, and stir to coat well. Refrigerate for about an hour, stirring a few times throughout. Arrange greens on two serving plates, top with equal amounts of veggie toppings and drizzle with any remaining marinade. (The marinade serves as a salad dressing.)
