Lobster Quiche

1 pie shell
6 well beaten eggs
1 1/2 cups sour cream
1/2 tsp Worcestershire sauce
1/4 tsp black pepper
1 tsp Dijon mustard
1 cup grated Swiss cheese
1 cup grated sharp
cheddar cheese
1/2 cup chopped scallions
6 oz chopped lobster meat
paprika to taste

1 tsp Dijon mustard
1 cup grated Swiss cheese
1 cup grated sharp
cheddar cheese
1/2 cup chopped scallions
6 oz chopped lobster meat
paprika to taste
Preheat oven to 375°F. In a medium-sized bowl, combine eggs, sour cream, Worcestershire sauce, pepper and Dijon mustard. (This is the quiche batter.) In a separate bowl, toss the two cheeses with the scallions and lobster. Place lobster mixture in pie shell. Add the quiche batter and sprinkle with paprika. Bake for 30-40 min. until knife inserted near centre comes out clean.
