Lobster Chowder
1⁄2 cup butter
3 onions, chopped
1 cup celery, diced
1 small green pepper, diced
1 small red pepper, diced
1⁄4 cup flour
1 tbsp Italian seasoning
2 tsp salt
1 tsp pepper
11-oz can lobster meat, cut in bite-sized pieces
2 (385 ml) cans 2% evaporated milk
In a large saucepan, boil 4 cups water. Add potatoes and cook for 20 min., until tender. In skillet, melt 1⁄4 cup of the butter over med. heat. Add onions, celery and peppers; cook, stirring occasionally, for about 10 min. or until softened. Sprinkle with flour, seasoning, salt and pepper. Cook for 2 min. Add to potato mixture. In same skillet, melt remaining butter over med. heat. Add lobster and cook, stirring, for 4 min. Add to potato mixture. Add milk and stir over med. heat for 10 min. or until heated through.
