Lobster Bisque

1 cup lobster meat
2 tbsp minced onion
5 tbsp butter
4 tbsp all-purpose flour
3 cups milk
1 ½ tsp salt
1 cup heavy whipping cream
3 tbsp chopped fresh chives

In a medium size pot, saute lobster meat, onion and butter until onions are soft.
Stir flour into the pot. When all ingredients are well blended, add milk, salt and cream. Cook over a low heat until the soup has thickened.
Garnish soup with green onions before serving. Serve with bread and garnish of choice. Yields six servings.
