Lemon Poached Pears
2 cups white wine
2 tbsp lemon zest
1 cup lemon juice
3 star anise, whole
2" cinnamon stick
1 cup sugar
2 cups water
Mix all ingredients together, except the pears. Bring to a boil. Reduce heat to simmer and add pears. Cook pears until they are easily pierced with a paring knife (should take 20-30 minutes). Be sure to flip the pears over every so often to evenly coat them in juice. Remove the cooked pears to a dish and reduce the liquid over simmering heat until it thickens and starts to get syrupy. Pour it over the pears and top with your favourite whipped topping. Yield: 3-6 servings
