Jamaican pork

3-4 boneless pork chops
1 onion
1 green pepper
1 tbsp canola oil
1 tbsp cornstarch
1 tbsp brown sugar
1 tsp salt
1 tsp black pepper
1 tbsp white vinegar
1 tbsp soya sauce
1 can pineapple tidbits, juice reserved
1/2 cup ketchup
1/2 cup water
2 cups minute rice
2 cups water
1 tbsp margarine

Cut pork chops into cubes. Dice onion and green pepper. Brown pork, onion, and green pepper with canola oil in large frying pan. Next, mix up cornstarch, brown sugar, salt, pepper, vinegar, soya sauce, juice from the canned pineapple, ketchup and water in a mixing bowl. Stir for a minute and then pour mixture in the frying pan with the pork, turn on medium heat and bring to a boil. Add pineapple tidbits and simmer for approx. 30 min.
While this simmers, pour 2 cups of water and a tablespoon of margarine in a pot and bring to a boil. Remove from heat, pour in 2 cups of minute rice and cover for at least 10 min. When the pork mixture is ready, serve the rice on a plate and pour the mixture over top.
