Hot-n-Spicy Spareribs
1 tbsp vegetable oil
2 onions, coarsely chopped
2 garlic cloves, crushed
2 (28 oz) cans diced tomatoes, incl. juice
1 (14 oz) can tomato sauce
1⁄2 cup brown sugar
1 tbsp Worcestershire sauce
1⁄4 tsp dried mustard
1⁄4 tsp crushed dried chilies (opt.)
Cut ribs into serving-sized pieces. Place in large pot. Cover with water and bring to a boil. Reduce heat and simmer, covered, until ribs are tender. Heat oil in a large frying pan over med. heat. Add onions and garlic and cook until soft (about 5 min.). Add tomatoes with juice. Stir in remaining ingredients and bring to a boil. Boil vigorously, uncovered, for 20 min. to reduce liquid and blend flavours. Stir frequently. When ribs are tender, preheat oven to 350°F. Drain ribs and spread in a large broiling dish with shallow sides. Cover ribs with sauce. Bake, uncovered, for 45-60 min. Stir sauce often and repeatedly baste ribs, making sure they are all well covered with sauce.
