Ham with Apple Cider Sauce

1 toupie ham, sliced
1 1/2 L apple cider
1 cup raisins
1/3 cup brown sugar
1/3 tsp nutmeg
1 tsp lemon zest
6 tbsp cornstarch
Salt & pepper to taste

Bake ham slices (covered) in enough water to cover the bottom of the pan; cook until ham is piping hot (about 30 min. at 350°F). To a saucepan, add cider, raisins, sugar, nutmeg and zest; simmer for 5 min. In a small bowl, mix cornstarch with a little cold water to make a paste; stir into the sauce and simmer until thickened. Season with salt and pepper. Pour sauce over ham slices on individual plates before serving.
