Greens
1 tbsp extra virgin olive oil
4 slices bacon, sliced very thinly
1 cup onion, sliced thinly
Salt & pepper
Pick the greens clean, then wash, spin dry and set aside. Heat oil over medium heat and add bacon. Render out as much fat as you can. Add onion and cook until onion is soft and starting to take on a little colour. Add the greens and stir/toss them until they are wilted, but not completely limp. You still want a little texture. Allow them to drain in a colander, if necessary. Season with salt and pepper and serve immediately. Makes 4-6 servings.
