Fish Undercover
6-8 white fish fillets, cod, haddock,...
½ pound bacon
2 medium onions
Tea Biscuit Topping:
2 cups flour
¼ cup butter
3 tsp baking powder
¾ cup milk
½ tsp salt
¼ tsp pepper
Arrange fish in a greased baking dish, a single layer. Cut the bacon into small pieces and fry, add sliced onion, mix well, when onions are transparent, put this over the fish as evenly as possible. Cover with tinfoil and bake 40? F for 10 minutes. While you are waiting, make tea biscuit topping.
Tea Biscuit Topping:
Rub butter into flour and baking powder, mix in the salt and pepper, then add the milk and make a soft dough. Roll to fit the pan. Remove the pan from the oven and put the dough over the fish. Put back inthe oven till the biscuit is cooked, (10-12 minutes).
