Fish Tacos

Difficulty: easy Prep Time: Fifteen Minutes Total Time: Under an hour
4 tilapia fillets, halved lengthways
2 tbsp extra virgin olive oil
8 (6") flour tortillas
Zest from 1 lime
1 cup sour cream
2 tsp cumin, ground
1 tsp chili powder
1/4 tsp cayenne
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1 tsp salt
Your favourite taco toppings (eg. shredded lettuce, diced tomato, bell peppers etc.)

Mix the lime zest and sour cream together and place in the fridge. Mix all the spices together and sprinkle generously over both sides of the fish pieces. Heat the oil in a non-stick pan over medium-high heat. Fry the fish until cooked through and place on a paper towel. Grill tortillas or heat them in a frying pan briefly to warm and toast them a little. Fill each tortilla with veggies, top with a piece of fish and finish with the lime sour cream. Serve immediately. Yield: 4 servings
