Fish Sticks

Strips of cod about 1/4 inch thick (you can also use other fish, such as salmon)
1 cup flour
1 cup cornstarch
3 tbsp sugar
1 tbsp baking powder
Pinch of salt
3 cups cold water
1 cup flour

Combine all the batter ingredients, including water, and whisk together. Let rest for about 5 minutes. Lightly flour cod strips, then dip in batter. Cook in deep fryer heated to 350°F. Strips are done when batter is golden brown.
