Fish Stew

Difficulty: easy Prep Time: More than 15 Minutes Total Time: Under an hour
1 clove garlic
2 tbsp olive oil
5 medium potatoes, peeled and sliced 1/4 inch thick
2 vegetable oxo cubes
2 cups hot water
1 tsp parsley
1/4 tsp sweet basil
1 lb haddock
1 onion chopped
1 carrot grated
salt and pepper

In large saucepan, over medium heat, saute garlic in oil until soft. Add potatoes. Crumble Oxo cubes into hot water and pour over potatoes. Simmer until tender crisp about 10 minutes. Add parsley and basil. Cut Haddock into cubes. Place on potato mixture. Top with onion and carrot. Add salt and pepper. Simmer 15-20 minutes.
