Fish Salad

1 lb. fish fillets
1/2 c. lemon juice
1 c. water
1 onion {chopped}
1 tsp. salt
1/4 tsp. pepper
1 1/2 tbl. chopped parsley
1 bay leaf
Lettuce {torn or cut}
2 tomatoes {chopped}
1 cucumber {sliced}
2 stalks celery {chopped}
1 green pepper {chopped}
Chopped parsley

1/4 tsp. pepper
1 1/2 tbl. chopped parsley
1 bay leaf
Lettuce {torn or cut}
2 tomatoes {chopped}
1 cucumber {sliced}
2 stalks celery {chopped}
1 green pepper {chopped}

1. Put the fish, lemon juice, water, onion, salt, pepper, parsley & bay leaf in a saucepan. Cover tightly & simmer until fish is cooked. Remove the fish from the saucepan & break into bite-size pieces. Chill.
2. Mix together the lettuce, tomatoes, cucumber,celery & green pepper.
3. Add the fish & toss gently.
4. Pour on dressing of your choice & toss again.
5. Serve garnished with chopped parsley.
