Falafel Kebab

Difficulty: easy Prep Time: Ten Minutes Total Time: 30 Minutes or Less
Dipping Sauce
1/2 cup sour cream
2 tbsp lime juice
1/2 tsp lime zest
1 tsp fresh chives, minced
Falafel
1 can chickpeas, drained
1 tbsp cilantro
1 tsp fresh parsley
2 cloves garlic
1/2 tsp cayenne
1/4 cup flour
1 tsp baking soda
2 tsp lime juice
1 tsp cumin
1/2 tsp salt
1/2 tsp ground black pepper
Additions
1 cup pineapple chunks
1 red & 1 green pepper, cut into chunks
1 large red onion, cut into chunks

Mix all the dip ingredients in a bowl and refrigerate. Place all the falafel ingredients in a food processor fitted with an S blade. Blend until everything is mixed evenly. Form the mixture into small balls about the size of golf balls and flatten just slightly. Deep fry the falafels at 350F until they float and are golden brown. Drain on paper towels. Thread the falafels, pineapple, peppers and onions onto skewers and place them on a hot BBQ to cook the veggies through. If necessary, spray the grill with non-stick cooking spray first. Serve immediately with cold dipping sauce. Yield: 3-6 servings
