Falafel Burgers

Difficulty: easy Prep Time: Fifteen Minutes Total Time: 30 Minutes or Less
1 (19 oz) can garbanzo beans (chickpeas), rinsed and drained
2 cloves garlic, minced
1 small onion, finely chopped
1 1/2 tbsp chopped fresh cilantro
1 tsp dried parsley
1/8 tsp ground black pepper
1/8 tsp salt
1 tsp ground cumin
1 tsp ground coriander
1/8 tsp ground turmeric
2-4 tbsp flour
1/2 tsp baking powder
Fine, dry breadcrumbs

Combine chickpeas, garlic, onion and spices in a food processor; pulse until well mixed. Add flour and baking powder; pulse until well combined. Add enough breadcrumbs until it all holds together in a thick paste, much like a homemade burger mixture would. Form the mixture into medium-sized balls, and flatten into patties. Fry in a small amount of oil until golden brown on both sides (5-7 minutes). Serve hot on a burger bun with celery leaves or lettuce and tzatziki sauce. Yields 4 patties.
