Energy Bites

1/2 cup natural almond butter (no sugar or other additives)
1/4 cup honey
1 tsp cinnamon
1 tsp vanilla
1 tbsp melted butter (or vegetable or coconut oil)
1/2 tsp kosher salt (or 1/4 tsp regular table salt)
1 tbsp instant espresso powder (instant coffee, crushed) opt.
1 tbsp cocoa
3 tbsp whey powder (or powdered milk) opt.
1/2 cup ground flax seed
1 tbsp chia seeds
1 cup large flake oats
1/3 cup Hemp Hearts (or an extra 1/3 cup oats)
1/4 cup honey

1/3 cup Hemp Hearts (or an extra 1/3 cup oats)
In a medium mixing bowl, combine almond butter, honey, cinnamon, vanilla, butter, salt, espresso and cocoa. Mix well. Add remaining ingredients and stir until well blended. Roll into donut-hole sized balls, compressing the mixture in your hands as you roll. Refrigerate for a half hour to firm up, then store in an airtight container at room temperature
