Eileen Mootrey’s Coconut Balls

Difficulty: easy Prep Time: Fifteen Minutes Total Time: Under an hour
2 cups coconut
2 cups icing sugar
1/2 cup butter
1/4 tin cream
Coating:
1 1/2 cups chocolate chips
1/4 block Parowax

Mix together coconut, icing sugar, butter and cream and form into balls.
Coating: Melt Parowax in a double boiler. Add chocolate chips and heat until completely melted. Dip balls in chocolate and place on a cookie sheet lined with wax paper. Let cool.
