Easy and Delicious Partridgeberry Muffins

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
2 cups flour
1/2 cup sugar
4 tsp. baking powder
1/2 tsp salt
2 eggs
1/2 cup oil
1 cup milk
1 cup fresh or frozen partridgeberries

Stir together the flour, sugar, baking powder and salt into a bowl. In a separate bowl, beat eggs until frothy. Mix in oil, milk and partridgeberries. Pour this into dry ingredients and stir until moistened. Fill muffin tins 3/4 full. Bake in 400 degree F oven for 20 to 25 minutes.
