Double Baked Potatoes

4 large potatoes, washed
2 tbsp butter, melted
1/4 cup Parmesan cheese, shredded
Salt & pepper
1/4 cup warm milk
4 slices bacon, fried crisp and crumbled
1/2 cup cheddar cheese, shredded
4 tbsp sour cream
1/2 bunch chives, finely chopped

Bake potatoes at 350°F until cooked through. Cutting lengthwise, slice off top 1/4" of potato and scoop out insides; set aside. Mash potato insides with butter, Parmesan, salt, pepper and enough milk to make a soft potato mixture. Whip until fluffy. Fill potato skins with mashed potatoes and top with bacon and cheddar. Bake at 350°F until potatoes are heated through and cheese is melted. Top with sour cream and chives. Serves 4.
