Diet Cheesecake
1/4 cup light margarine
3 pkgs sugar substitute
1 cup whipping cream
1 pkg fat-free cream cheese
1 can cherry pie filling (or other fruit)
Press mixture of wafer crumbs, margarine and 1 pkg sugar substitute into a 9" x 12" pan. Reserve 1 and 1/2 tbsp of mixture to sprinkle on top. Cream together whipping cream, cream cheese and 2 pkgs sugar substitute. Spread mixture over crust. Spread pie filling over cheese mixture and sprinkle remaining crumbs on top. Chill for 12 hours, or overnight. Makes 12 servings.
