Crunchy Chicken Pitas

3/4 cup grated carrot
3/4 cup finely chopped cooked chicken
1/2 cup finely chopped celery
6 tbsp chopped dill pickle
1/3 cup sharp cheddar cheese
1/4 cup light mayonnaise
2 tbsp sliced almonds, toasted
sprinkle of pepper
1 whole wheat pita bread (7 inch), halved
2 lettuce leaves
3/4 cup finely chopped cooked chicken
1/2 cup finely chopped celery
6 tbsp chopped dill pickle
1/3 cup sharp cheddar cheese
1/4 cup light mayonnaise
2 tbsp sliced almonds, toasted
sprinkle of pepper
1 whole wheat pita bread (7 inch), halved
2 lettuce leaves
Combine first 8 ingredients in medium bowl to create crunchy chicken filling. Line each pita bread half with 1 lettuce leaf. Spoon filling into each pocket. Makes 2 chicken pitas.
One chicken pita: 388 calories, 18.9 g Total Fat, 60 mg Cholesterol, 29 Carbohydrate, 5 g Fibre, 27 g Protein.
