Creamed Vegetable Stew
1 cup potatoes, cubed
1/2 cup green pepper, diced
1/2 cup green onions, diced
1/2 cup celery, diced
salt to taste
1/2 lb salt pork
1/2 cup flour
4 cups milk
Place carrots, potatoes, pepper, onions and celery in a large saucepan. Add 2 tsp salt and enough water to cover vegetables; bring to a boil. Reduce heat and simmer until vegetables are tender. Drain; set aside. Wash salt pork; remove rind and cut pork into cubes. Place in large saucepan and cook over medium heat until brown; stir frequently. Add flour and mix well. Stir in milk. Bring to a boil, stirring constantly. Reduce heat; simmer until thickened. Season with salt to taste. Add vegetables, stir and serve.
