Cranberry sauce
2 tbsp fresh local honey
2 tbsp dark rum
1 tsp ground ginger
Place all ingredients in a heavy bottomed sauce pan and bring to a boil, stirring
continuously. Lower heat and let
simmer for 10 minutes. Remove from heat and blend with a hand blender for smooth sauce, or serve as is for whole berry sauce. Serve as a condiment with fresh local turkey, pork or wild game. Note: This sauce is very thick. It can be thinned with grape juice, and it can be sweetened by adding more honey or sugar. (Serves 8)
