Cranberry Pear Chutney

2 cups water
1 cups raisins
2 cups sugar
2 tbsp white wine vinegar
1 cup orange juice
2 tbsp orange zest, grated
2 tbsp fresh ginger, slivered
6 cups cranberries
2 pears, peeled, cored & chopped
1 cup toasted almonds, slivered

Boil water & add raisins. Remove from heat & let stand 20 mins. Drain, reserving 1/2 cup (125 ml) liquid. Add sugar & vinegar to raisin water. Heat in saucepan until sugar dissolves. Increase heat & boil, without stirring, until syrup turns golden brown, about 15 min. Add orange juice, zest, ginger & cranberries & cook about 10 min. Stir in raisins, pears & almonds. Pour in sterilized jars & keep refrigerated. Makes about 6 cups (1.5 L).
