Cod Lasagna
1⁄4 cup butter
2 cloves garlic, minced
1 small onion, diced
1 tbsp fresh dill, chopped
1 tsp black pepper
1⁄4 cup flour
1 L 2% milk
1⁄2 cup shredded mozzarella cheese
3 tbsp parmesan cheese
3 cups spinach or turnip greens
1 (8 oz) pkg fresh mushrooms, sliced
2 cups shrimp, cooked
2 cups cod, cooked and flaked
2 large tomatoes, sliced
1 cup mozzarella cheese, shredded
Sauté onion and garlic in butter. Add dill and pepper; add flour, then milk and cook over med. heat till slightly thickened. Stir in mozzarella and parmesan. Remove from heat; set aside. In another pan, sauté spinach (or greens) till wilted; remove from pan. Add mushrooms to pan and sauté. In a casserole dish, layer sauce, then noodles. Top with some spinach and all shrimp, followed by a layer each of sauce, cod, spinach, mushrooms and tomatoes. Finish with sauce. Bake at 350°F for 25-30 min. Top with mozzarella and broil for 5-10 min. till browned.
