Coconut-Lime Squares

Crust:
2 cups flour
3/4 cup sugar
1 1/4 tsp baking powder
2 cups oats
1 cup butter
Filling:
1/2 cup cornstarch
1/4 cup flour
1/2 tsp salt
1 1/4 cup sugar
1 can coconut milk
1/4 cup water
6 egg yolks
4 limes, juiced and zested
3 tbsp butter

Preheat oven to 350°F.
For the Crust: Sift together flour, sugar and baking powder. Mix in the oats. Cut in butter until butter is the size of coarse cornmeal (the oats will not get smaller). Press half the mixture into the bottom of a 9"x13" pan.
For the Filling: In a medium saucepan, sift together cornstarch, flour, salt and sugar. Pour in water and coconut milk; stir constantly over medium heat until mixture comes to a slow boil. Remove the pan from the heat. Temper the egg yolks with about 2 cups of the heated mixture (pour the mixture into the eggs to warm them without cooking them). Return the eggs to the hot mixture and cook for an additional 4-5 minutes over low-medium heat, stirring constantly until the mixture just begins to bubble again. Remove from heat and stir in the juice and zest, then whisk in the butter.
Pour filling over crust and top with remainder of crust mixture. Gently pat down topping and bake for about 40 minutes.
Cool completely in the pan before cutting into squares.
Yield: 12-16 squares
