Chicken Chop Suey

1 - 2 lbs chicken
1 cup chicken broth
1/2 clove garlic, crushed
1/2 lb mushrooms, chopped
1/2 green pepper, cut in strips
1 onion, sliced
2 tbsps margarine
1 large can bean sprouts, drained
1 tsp salt
2 tsp cornstarch
2 tsp soya sauce
3 cups cooked rice
1 cup chicken broth

2 tsp cornstarch
2 tsp soya sauce
3 cups cooked rice
Simmer chicken 15 minutes, drain and save stock. Discard skin and bones. Saute garlic, mushrooms, onion and green pepper in margarine. Stir in bean sprouts and salt, cover and cook for 1 minute. Uncover and stir in cornstarch; add soy sauce; add cup of chicken broth and cook 12 minutes. Serve over rice.
