Chicken and Rice Bake

Difficulty: easy Prep Time: Five Minutes Total Time: Under an hour
1 can condensed cream of mushroom soup
1 cup water
3/4 cup uncooked regular long-grain rice
1/4 tsp ground black pepper
2 cups mixed vegetables (brocolli, carrot and yellow pepper)
4 boneless skinless chicken breasts, diced
1 cup cheddar cheese, shredded

Mix the soup, water, rice and pepper in a 2L baking dish. Cut carrot, brocolli and pepper into small pieces and add to dish. Mix in chicken. Cover and bake at 375°F for 45 minutes. Add cheese and stir through before serving.
