Cherry Surprise Cake
1 1/2 cups sugar
4 eggs
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp cinnamon
1 cup cherry pie filling
Preheat oven to 325°F and grease a 12"x 15" baking pan. In a large bowl, mix oil and 1 cup sugar thoroughly. Add eggs, one at a time, beating until fluffy. Add vanilla. Combine flour and baking powder, then add to wet mixture and beat together. In a small bowl, mix remaining ½ cup sugar with cinnamon and set aside. Pour half the batter in the bottom of the baking pan. Sprinkle with half the sugar and cinnamon. Spread cherry pie filling over top, then cover it with remaining batter and finish with rest of sugar and cinnamon. Bake for 50 minutes.
