Carrot Cake for Diabetics

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
1/2 cup oil
1/4 cup brown sugar
2 tsp cinnamon
1/2 cup raisins
2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
3 cups grated carrot
4 eggs

Put oil and brown sugar in bowl and beat together. Add eggs, one at a time. Then add carrot. Mix together flour, baking powder and baking soda and add to mixture. Add raisins. Bake in tube pan at 350°F for about 1 hour.
