Buffalo Cauliflower

Difficulty: easy Prep Time: Ten Minutes Total Time: Under an hour
1 head cauliflower, cut into florets
1 1/2 cups oat flour
1/2 tsp celery salt
1 tsp garlic powder
1/2 tsp pepper
1 tsp onion powder
1 1/4 cups water
1 cup of your favourite hot sauce (eg. Frank's Hot Sauce)

Preheat oven to 400F. Mix together flour, seasonings and water to create a batter. Toss the florets in the batter until they are evenly coated, but not dripping. Place them on a parchment-lined pan and bake for 10 minutes. Take the florets out of the oven and toss them (or brush them) in enough of the hot sauce to give them a light coating. Place them back on the parchment-lined pan and bake for another 10-15 minutes. The sauce should start to dry and take on some colour. Serve with reduced-calorie ranch salad dressing. Yield: 2-4 servings
