Broccoli and Rice Casserole

Difficulty: easy Prep Time: Ten Minutes Total Time: Under an hour
1 pkg broccoli
1 cup uncooked rice
2 tbsp butter
1/4 cup chopped onion
1 can cream of chicken soup (or cream of mushroom)
1/2 cup grated cheddar cheese

Cook broccoli and drain. Fry onion in butter; add rice and soup mixture. Place broccoli in casserole dish; pour mixture over broccoli. Place cheese on top. Bake at 350°F for 30 minutes.
