Blueberry Crumb Bars
3 tsp cornstarch
4 cups fresh blueberries
1 cup sugar
1 tsp baking powder
3 cups all-purpose flour
1/4 tsp cinnamon (optional)
1 cup unsalted butter, room temperature
1 egg
Stir together sugar and cornstarch. Mix in blueberries. Set aside. Preheat oven to 375F. Grease a 9" x 13" pan. In a medium bowl, stir together the 1 cup of sugar, baking powder and flour. Mix in cinnamon. Using a fork, blend in butter and egg. Pat half of dough into the prepared pan. Layer the blueberry mixture evenly over the crust and crumble leftover dough onto the berry layer. Bake for 45 minutes, or until brown on top. Cool before cutting into squares.
