Blueberry Banana Muffins

3/4 cup margarine
3 eggs
2 cups sugar
1 tsp vanilla
3 mashed bananas
4 cups whole wheat or white flour
1/4 tsp salt
2 level tsp baking soda
3 level tsp baking powder
3 tbsp ground flaxseed (optional)
1 cup fresh milk
2 cups blueberries

Preheat oven to 325°F. Cream margarine, eggs and sugar. Add vanilla and mashed bananas, then flour, salt, baking soda and baking powder. Mix well. Add flaxseed, if desired, followed by milk. Stir to a spoonable consistency (maybe a little more or less milk). Fold in blueberries. Fill greased muffin pans 3/4 full and bake for 25 minutes or until muffins split on top. Remove from pans and let cool completely on rack. Makes 24 muffins.
