Black Bean Brownie

2 (19oz/540ml) cans black beans, rinsed well and drained
4 large eggs
3/4 cup white sugar
3/4 cup brown sugar
1 tsp vegetable oil
2 tbsp milk
1 tbsp balsamic vinegar
1 tsp salt
1 cup dark cocoa powder
1 tsp baking powder
1 tsp baking soda
1 tsp pure vanilla extract
1 tsp instant coffee
1 cup dark chocolate chips
4 large eggs

2 tbsp milk
1 tbsp balsamic vinegar
1 tsp salt
1 cup dark cocoa powder
1 tsp baking powder
1 tsp baking soda
1 tsp pure vanilla extract
1 tsp instant coffee
1 cup dark chocolate chips
Preheat oven to 350°F. Put all ingredients, except the chocolate chips, in a food processor or blender and blend until very smooth. Scoop into lined muffin cups, filling 3/4 of the way. Sprinkle with chocolate chips. Bake for 20-25 minutes, or until a toothpick inserted in the centre comes out clean. Yield: 20-24 brownies.
